My Story

My name is Joel Rolon, born in Hoboken, NJ back in 1999. I grew up in the heart of downtown Jersey City, attending public schools there up until High school. That’s when I moved to Aberdeen, NJ and attended Matawan Regional High School, where I graduated in 2017. currently I am working on my degree in hospitality. I have worked in the restaurant business since the age of 15 and immediately knew this is where I belonged. I began on working to prove myself in the industry, earning promotions and accomplishments along the way. It was obvious from day one that I wanted to open a business of my own, with the ultimate goal of owning my very own restaurant.

Ace Of Spades is my first step into the business ownership arena and I intend it to be successful, accepting nothing less. Even before I was legally allowed to drink, I was always fascinated with bartending and creating cocktails which I consider pure art. Although I am certified, I am not a bartender by trade but my will and drive to create has not stopped me from doing what I love to do.

My objective for Ace Of Spades Bartending is to relieve the duty of the host of a party from worrying about a key factor: drinks! We create an atmosphere like no other, along with a sense of ease for the host not having to think about all the details of running a bar. We create cocktails, you create memories!
